Apple-icious Oatmeal Bake Recipe
1/3 cup brown sugar
 
2 tablespoons butter, melted
 
1 large egg
 
2 cups 1% lowfat milk
 
1/2 teaspoon vanilla extract
 
1½ cups quick-cooking oats
 
1 cup chopped dried apple OR 1 medium red apple, unpeeled and cut into ¼-inch dice (about 1 cup)
 
1/2 cup pecans, coarsely or finely chopped (your choice)
 
1½ teaspoons baking powder
 
1/2 teaspoon salt
 
1/4 teaspoon ground cinnamon, plus more for sprinkling

Directions
1.    Preheat the oven to 350ºF. Lightly oil or coat an 8 X 8-inch baking pan or dish with nonstick cooking spray and set aside.
2.     In a large bowl, whisk together the brown sugar and the butter until well combined. Whisk in the egg until creamy and then whisk in the milk and vanilla.
Stir in the oatmeal, apple, pecans, baking powder, salt, and cinnamon. Place the mixture evenly in the pan, sprinkle with additional cinnamon, and bake about 30 minutes, or until the top turns golden and the oatmeal is set. Scoop out and serve warm.
