Cheesy Broccoli Potato Soup

17 Minute (no kidding) EASY Cheesy Broccoli Potato Soup
32 ounces low sodium chicken broth
1/2 cup onion, chopped
2 cups fresh broccoli, chopped
1 cup instant potato flakes
1 cup mild cheddar cheese, shredded
1 cup skim milk
2 tablespoons butter

Directions:
1 Place broth, onions, and broccoli in a pan and simmer 8-10 minutes…don't over cook or you'll get a horrible and stinky soup!
2 Add milk, butter, cheese and stir in potato flakes.
3 Heat 2-3 more minutes.
4 HINT:  Adjust soup's consistency by adding milk to thin or potato flakes to thicken.
