Chewy Potato Dumplings


1 c. potato flakes           
1 tsp. salt
1 c. hot water                
3/4 c. flour 
2 eggs

Combine potato flakes, water, and salt.  Let soak for 10 minutes, then stir in flour and eggs. Meanwhile, fill a large saucepan with water and bring it to a boil.    Knead dough on a lightly floured surface until smooth and no longer sticky.    Divide into 6 balls, drop into the water, and boil about 20 minutes or until they float.  Remove and drain.   You can also drop these into a pot of soup; they’ll end up with more flavor this way, too.
