1/2 c. butter
1 tsp. coconut extract
1 c. sugar
1 1/3 c. potato flakes
1 egg
1 1/3 c. biscuit baking mix
Heat
oven to 325 degrees. Cream the butter with sugar, then beat in the egg
and coconut extract. Stir in potato flakes and baking mix. Drop by
heaping spoonfuls onto greased cookie sheets. Bake for 12 minutes, til
bottoms are light brown but tops are white. If you bake them any
longer than this, they won’t be chewy. Cool 1-2 minutes on cookie
sheet, then remove and cool completely on a cooling rack.
2 dozen. Note: if you don’t have biscuit mix, use 1 1/3 c.
flour, 1 1/2 tsp. baking powder, and 1/2 tsp. salt.
