1 Lemon cake mix
2 eggs
½ C. white bean puree
Preheat oven to 350 degrees. Mix all ingredients together. Drop onto a greased cookie sheet. Bake 8-10 minutes. Cool until easy to touch. Dip tops of cookies into glaze. Let dry. Makes 3 doz.
Lemon Glaze
2 C. powdered sugar
¼ C. lemon juice concentrate
Mix all ingredients with a whisk until smooth.
