Sweet and Sour Meatballs



1 batch of gluten meatballs prepared and cooked as directed
1/2 cup packed brown sugar
11/2 tablespoons cornstarch
1 (20 ounce) can pineapple chunks
1/3 cup vinegar
11/2 tablespoons soy sauce
1 cup chopped green and red peppers, optional

Mix brown sugar and cornstarch in pan.
Stir in pineapple (with syrup), vinegar and soy sauce.
Heat to boiling, stirring constantly, reduce heat to simmer.
Add meat balls.
Cover, simmer, stirring occasionally, 10 minutes.
Stir in green and red peppers if desired.

Makes 4 generous servings
