Quesadilla Variations:

Quesadilla: Heat a skillet or griddle.  Without grease or butter, set a flour tortilla on the griddle.  Lay sliced or grated cheese on half of the tortilla.  Fold the other half over it.  When cheese starts to melt, and tortilla starts to brown, turn it over and brown the other side. Serve warm.

Ham & Cheese Cheese-a-dilla:  Add some sandwich ham to the cheese.

Taco-dilla: Add taco meat to cheddar cheese.  If you serve them immediately, you can pull them apart to add lettuce, tomato, sour cream, and salsa as you like.

Pizza-dilla: Add pepperoni or sausage to the cheese (no tomato sauce necessary) Pizza usually has mozzarella cheese, but cheddar works fine.

Steak-a-dilla: Add strips of cooked milanesa or thin-cut steak to the cheese.  Monterrey Jack goes well with steak.  Pepper Jack is also good.

Chick-a-dilla: Add pieces of cooked chicken to cheese of your choice.
